Personal chef leads table-to-farm movement

The farm-to-table movement has become standard protocol for many restaurants, but some chefs, including personal chef to M. Night Shyamalan, Eric Yost, are reversing that trend, bringing the table to the farm instead.

According to The Philadelphia Inquirer, the idea of this new reversed trend is to bring the restaurant setting to the farm, showing patrons where their food is coming from and helping drive business for the farm itself.

“The whole purpose of this farm for me was to raise the food this way and sell directly to people,” said Dean Carlson, who recently added an alfresco dinner service to his Wyebrook Farm in Honey Brook, Chester County, Pennsylvania. “If the chef’s product is what people want most, then that’s what we’ll do.”

Carlson is a former bond trader who opened his renovated 360-acre farm to the public in 2012. Wyebrook is run by Eric Yost, the former head chef at White Dog Cafe in Philadelphia and private chef to filmmaker M. Night Shyamalan. Yost noted that the entire idea is an experiment, but it is growing in popularity faster than they can keep up.

Wyebrook focuses on farm-fresh vegetables and grass-fed meats, but it isn’t the only farm embracing an onsite restaurant. Others include Mainland Inn at the Quarry Hill Farm in Harleysville, Pennsylvania, and Blue Hill at Stone Barns in Pocantico Hills, New York, where President Barack Obama’s personal cook recently held his private wedding.
